Ama-moto 甘本 translates literally to ‘sweet origin’. Rice, depicted in our logo, is the symbolic heart of Amamoto as it encapsulates “Sweetness From Within”. Embodying 12,000-year history, rice is a staple of Eastern civilisation and the basis of life and fabric of culture in many societies.
Inspired by the past with a focus on the present, Amamoto brings Japanese traditions of Amazake to the heart of Singapore, introducing its first café in One Raffles Place.
At Amamoto, a new generation built on a lifestyle of rejuvenation and revitalisation through Nature’s provisions is cultivated. The process of making Amazake distils ‘sweetness’ from the grain of rice, putting it into the flavour of the drink, and life through positive well-being.
Amazake is an all-natural, alcohol-free beverage made from fermented rice with no added sugar and additives. Extolled as a delightful elixir for wellness and wellbeing for more than 1,500 years, Amazake can be drunk at any time of the day. The culture of drinking Amazake dates back to the Kofun period (250-538) in what is now known as Japan, and was prevalently taken as an energy drink during the Edo period (1603-1868).
The making of Amazake begins when the mould – Aspergillus Oryzae – also known as koji-mould or koji-kin, is spread over steamed rice, fermentation starts and koji is subsequently made. Water is then added to koji and kept at 60ºC, with at least 100 types of enzymes produced.
Koji-kin grows mainly in Japan, and was hailed as the ‘national mould’ in 2006 by The Brewing Society of Japan. Koji, also the fermented base for other Japanese condiments such as soy sauce, miso and sake, survives for less than a day. Most Amazake and koji producers will hence store them dry. Dry koji is less aromatic and contains fewer enzymes than raw ones.
Amamoto believes in serving great tasting and well-being enhancing food without compromising on taste; only raw koji is used in the making of our Amazake.
Amazake brings nutrition, repair, and health to the body. During the fermentation process, at least 100 types of enzymes are produced. These enzymes help break down proteins into essential amino acids, fatty acids, vitamins and minerals; and rice into oligosaccharides.
The pro-biotics in intestines feed on oligosaccharide to grow and reproduce – aiding digestion and relieving constipation, hence a healthy digestive system ensues. The amino acids – specifically GABA – in Amazake normalises the functions of liver and kidney, and the function of parasympathetic nerves which promotes better sleep.
Amazake also contains anti-oxidants that facilitate de-toxing, while its high Vitamin B content promotes generation of new red blood cells, reduction of stress and maintenance of a healthy nervous system. Ferulic acid fights the free-radical damage that contributes to ageing with a regeneration of skin, teeth, nails and growth of hair.
